Some of you might already know about our Monthly Recipe Challenge.
We started all this last month, and we got an awesome response from a lot of our members :aww:

7 entries got submitted to our Recipe Challenge folder, and it was not easy at all to choose the winners.
For me, you all baked yummy looking cakes, and I would've loved to be your guest for a cup of tea along with a piece of cake. :giggle:

Your changes in the recipe sounded yummy, though they didn't change the main recipe too much. I liked how you substituted cinnamon with lemon peel to go along with the blueberries. :clap:

Now on to our October Challenge!

This month we will have something italian, and something you might not even have heard of before!

Pesto!



"Pesto is a sauce originating in Genoa in the Liguria region of northern Italy and traditionally consists of crushed garlic, basil, and European pine nuts blended with olive oil, Parmigiano Reggiano (Parmesan cheese), and Fiore Sardo (cheese made from sheep's milk)."

The most famous of all pestos is probably the "Pesto Genovese" which is what we will give you as a recipe!
In addition to this yummy basil paste, which you can eat with your pasta, on your bread, and many more, we will add dried tomatos which will give it an even more italian round-up and creates something more special, than the average pesto.

We want you to make your own pesto and take a photo of it in the glass, on your pasta, or whatever you think would look fancy :eyes:

For anyone still planning to enter the pesto challenge for October, I have some quick advice:

Take your photo AS SOON AS YOU POSSIBLY CAN once the pesto is made!

As I just found out, this darkens VERY quickly ... Particularly if it sits out for long. Left some extra out in a small dish by accident ... 2 hours later, it was almost black. Bottling and refrigerating helps, but it still won't be that pretty green for long.

I suspect adding a little acid, like lemon, will deter this. I just haven't tried it, because I don't think my mother will tolerate my attacking her basil plants again. So I'm just going to have to use what I've got. :-)

In any event, just wanted to give a heads up to any one else that's submitting at the last minute. :-)
